As far as "pulling pairings out of a hat", eh yeah it does seem like it sometimes, but it's going to happen no matter what fandom you're in. Aelita and Ulrich, especially with Evolution drawing out their relationship more is a valid non-canon ship.

It's less "pulling pairings out of a hat" and more "thinking creatively about the show and considering possibilities not put forward in canon in order to broaden your enjoyment of the show itself and, especially if you're a fanfic writer, challenge yourself by writing something that hasn't really been given much attention otherwise". Such is the life of a non-canon shipper.
